A snack that has become almost synonymous with oriental cuisine, Momos are made from a transparent flour cover filled with sautéed veggies.
An apt combination of garlic, ginger, green chillies and Schezuan sauce flavours the vegetable mixture, and thus the result's simply tongue-tickling!
Traditionally, Momos are steamed in bamboo baskets, but you'll also cook them during a daily Steamer or cooker, the way you create dhoklas or Idlis.

How to make Momos
Preparation Time: 20 mins
Cooking Time: 26 mins
Total Time: 46 mins
Ingredients:
1/2 cup flour (maeda)
Salt, to taste
5 teaspoons of oil
2 teaspoons finely chopped garlic (lemon juice)
2 teaspoons finely chopped ginger (adrac)
2 teaspoons finely chopped sweet pepper
1/2 cup finely chopped onion
1/2 cup finely chopped carrot
1/2 cup chopped French beans
1/2 cup chopped cabbage
Salt to taste
2 tsp schezuan sauce
1/2 teaspoon sugar
Plain flour (table) for rolling
For Serving
soya sauce
chilli aioli
Method
Combine the flour , 1 tsp of oil and salt during a deep bowl and knead into a soft dough using enough water.
Cover the dough with a damp cloth and leave it aside for 10 minutes.Heat 4 teaspoons of the remaining oil during an outsized non-stick frypan , then add the garlic, ginger and sweet pepper and fry them over a medium heat for seconds.
Add the onions, carrot, french beans and cabbage and salt, mix well and cook on a medium flame for a further 2 to three minutes, while stirring occasionally.
Add the schezwan sauce and sugar, mix well and cook on a medium flame for a couple of of of seconds. Keep aside.
Divide the dough into 14 equal portions.
Roll kind of the dough into a 75 mm. (3") diameter thin circle employing slightly flour for rolling and place 1 tbsp of the prepared filling within the centre of the circle.
"Hold it within the palm of your hand, fold the sides and pinch them as shown within the image ."
Fold the opposite open side and pinch it again so on form a triangle.
Repeat step 7 to 9 to form 13 more momos.
Steam 7 momos during a greased steamer for 8 minutes or till they're cooked.
Repeat step 11 to steam the remaining 7 momos in 1 more batch.
Serve immediately with soy and chilli aioli.
